Just read One Toque Over the Line, the Angrychef blog. That's what I thought I'd be sounding like but seem to have opted for a gentler tone. The older I get the less ego-driven I become and (I think) thus, less opinionated. Or at least less furious in my opinions. Certainly less angry.
I can agree with a lot of things he said, but they seem like cheap shots, like bagging on Emeril. Yes, his popularity is dumb-founding but as a much wiser person than I said you can rarely go wrong by underestimating the public taste. Other things, like black & white check pants versus the goofy patterns I agree with but don't need to be pissed off about. I guess that's why his blog is Angrychef and mine is Knife's Edge.
I also think your mood influences your cooking. Some may see this as Nor-cal quasi-mysticism but if I'm angry it shows up my food, if I'm feeling lazy, that's there too. I'd like to have a balance. Anger can provide an edge but without understanding it becomes one-dimensional. Or dull. And this blog is all about keeping things sharp.
We're off for a few days in SF and then Fresno where I am given to understand they have 3 of every fast food outlet known to America. I don't think I'll be finding out firsthand. I'll try to post from the field so to speak, but even though I have a technorati profile my technology is severely limited. I've had a wireless card for my PDA for months and despite many attempts to configure it, it still doesn't work.
