I think you want to serve great, cutting edge food without being snobby or fussy (similar to a place I externed at in Highland, New York). You have to keep the locals happy - they are the regulars that keep you going - as well as tourists - they keep you reaching farther. I think also you are adding a baby into the mix and that changes everything - including personalities (even if you don't know how much yet.) Just my thoughts!

kewl post....training is never easy especially in or industry as it relies on the personality of each person. Even while u said, "dont remove the glass from the table while refilling" to me, it all depends on the situation.

Neat, our glue factory is in about the same situation. We most certainly don't take ourselves too seriously, but when it comes time to jump? We're there and it takes new hires by surprise. I like it that way.
