I started my vinegar with an unpasteurized vinegar from a natural foods store, I don't remember the brand. It has changed over time, certainly, but it was a good way to start. You can get it mail order, but I'm sure every fifth hippie up there is making vinegar. One word of advice: be bold in adding wines to your vinegar. If you really need a delicate clear tarragon vinegar, buy it for that application, your regular vinegar will be better for it.

If I ever visit I will bring you some of mine.
